We are our land.

Sustainability is a lifestyle. We are guardians of a land that we must pass on to future generations, preserving what we have in the best way we inherited it. Every business decision follows this principle.

The Ungrafted Vine: A Treasure of Vesuvius

Today we are the fourth generation of winemakers, fortunate to cultivate our vineyards on volcanic-sandy soil, ideal for growing ungrafted vines. Unlike most vineyards protected from phylloxera through grafting with American rootstock, here the volcanic nature of the soil provides a natural barrier against this parasite.

This condition allows the vines to grow their roots directly into the volcanic soil, reaching a depth of about 25 meters, without the need for rootstocks. New plants are propagated from cuttings using the layering technique, traditionally called “pass annanz”, which ensures genetic fidelity to the original grape variety and allows them to fully express the characteristics of the terroir.

Tasting a Vesuvian wine from ungrafted vines, a wine from Cantine Olivella, is a journey through history and geology, a tribute to the passion of winemakers who preserve this priceless heritage. A true oenological gem, symbol of the indissoluble bond between land, vine, and man.

Green manure

The practice of green manure is fundamental for the management of our vineyards. It consists of sowing mixtures of herbaceous plants in autumn and incorporating them into the soil in spring. This technique allows us to increase the organic matter in the soil, while helping to prevent runoff caused by rain and erosion due to winds.

Tying with willows

We have always managed our vineyards according to the principles of organic farming. By using natural materials such as willow branches and raffia fibers to tie the vine shoots to their supports, we have completely eliminated plastic from our fields, reviving the ancient traditions of our land.

Reuse of by-products: pomace and lees

From earth back to earth: the by-products of the winemaking process, such as lees and pomace, gain new life within our winery, as they are returned to the vineyard rows, providing additional nutrients and organic matter.
